Healthy Pumpkin Muffins
1/4 cup white flour (can also do gluten free)
3 eggs
1/2 cup pumpkin puree
3/4 cup nut butter (I’ve used almond or peanut)
3 tbsp oil (canola or avocado)
1/4 cup maple syrup
1 tsp vanilla
1 tsp cinnamon
1/2 tsp pumpkin pie spice
1.5 tsp baking powder
1/4 tsp baking soda
Pinch of salt
Preheat oven to 350 F. Combine all ingredients in a bowl.
Add mix ins such as chocolate chips - as many as your heart desires!
Spoon batter into regular or mini muffin tins.
Bake for 14 mins for mini muffins, 18 mins for standard muffins — makes 12 muffins.
